What’s my favorite protein source these days? The egg!
I was hooked on the humble egg at an early age. I can remember eating at the Coffee Shoppe in Mountain Brook as a child with my mom. She would bring me along after dropping my sisters off at school. We’d meet her friends. I’d watch them stab triangles of crispy, buttered toast in to the hot lava golden yolks of perfect over easy eggs. This grossed me out. Luckily, I came around and to this day, over easy eggs are my jam with their perfect texture, rich flavor, and nostalgia conjuring abilities.
Here are some of my favorite preparations of perhaps the greatest comfort food ever!
Chef Daniel Patterson’s Egg Swirl creates an insane texture unlike any scrambled or poached egg you’ve imagined. Seen in season 1, episode 9 of Mind of a Chef, this immediately brought me to the stove with a pot of simmering water. Check it out below - about 7:45 in to the episode!
Gordon Ramsay’s Perfectly Scrambled Eggs are a must have. You’ll yield the creamiest most dense paste of eggs that literally melt in your mouth. This is a great technique and I urge you to take the time to try it out tomorrow morning! Peep the video below and get inspired!
Last but definitely not least, I give you the bane of my existence. The Omurice Rice Omelette preparation has been the a technique that I have yet to master. Imagine a heap of exceptional chicken fried rice wrapped in a perfect football of scrambled eggs. Let’s one up it with a masterfully created omelette envelope that is perfectly set on the outside, yet creamy and custard like on the inside with small curds.
