Blueberry Chocolate Chip Cookies
I'm not one for sweets but that special someone in my life is crazy about them. Happy wife happy life, and the way to a woman's heart is through her stomach :)
These cookies are simply delicious. A little cocoa infusion takes the chocolatey factor over the top while the bursts of blueberries really balance out the sweetness with just the right amount of sour. Enjoy!
INGREDIENTS
2 ½ sticks unsalted butter, room temperature
1 cup brown sugar
1 cup white sugar
2 eggs
1 TBSP vanilla extract
2 ½ cups all-purpose flour
⅔ cup cocoa powder
1 tsp Kosher salt
1 tsp baking soda
1 ¼ cups semisweet chocolate chips
1 ½ cups blueberries
In a large bowl, mix together the butter, brown sugar, and white sugar. Cream the mixture by hand or with a hand mixed to a smooth, uniform texture. Add in the eggs and vanilla extract and continue to mix until just combined.
In a separate bowl, whisk together the all-purpose flour, cocoa powder, Kosher salt, and baking soda. Add the dry ingredients to the wet ingredients and fold in the mixture until fully incorporated. Fold in the semisweet chocolate chips and fresh blueberries. Drop large spoonfuls onto a parchment lined baking tray and bake in a preheated 350F oven for 12-15 minutes until the cookies are set.
