INGREDIENTS:
12 oz can Spam
¼ cup soy sauce
¼ cup mirin
¼ cup sake
2 TBSP sugar
2 cups short grained Japanese rice cooked
4 TBSP rice vinegar
Furikake to taste
3 sheets nori seaweed
Remove the Spam from the container - drain and pat dry. Cut into 8 equal slices. Place into a dry pan and fry on medium heat until browned on both sides.
Combine the soy sauce, mirin, sake, and sugar in a small sauce pan. Bring to a simmer and reduce until slightly thickened. Taste for salt and sweetness levels. Adjust as necessary.
Combine the cooked rice and rice vinegar in a mixing bowl. Gently mix the rice, folding and slashing to break down the chunks.
Using a Spam Musubi Rice Mold, create a rice patty in the shape of the spam slice (about 1.5 in thick) You can also use the spam can as a mold or your hands. Just make a compact oval of rice, then flatten and shape. Next, sprinkle some furikake to your liking on top of the rice patty. Dip the slice of spam into the sauce ensuring both sides are lightly coated. Place the slice on top of the rice patty. Next, cut 1 large sheet of nori into 3rds lengthwise. Wrap the musubi in the nori ensuring the snack is compact and tight. Enjoy!
